Wild Grouper on a bed of Seasoned Rice

Friday Fish Dinner made easy with one of our many blended rubs ready to use like this fish rub with lemon peel, coriander, pepper, thyme and bay leaf.

Ingredients (serves 4)
• 2 lbs. Fresh Wild Grouper Fillets (sub: snapper or Mahi Mahi)
• 1 TBLS vomFASS Fish Rub
• 2 TBLS vomFASS Lemon Extra Virgin Olive Oil
• 1 tsp minced garlic
• 2 TBLS vomFASS Calamansi Balsam Vinegar (or lemon juice)
• 4 sprigs of fresh rosemary

Directions:
1. Heat the oven to 400 degrees
2. Oil or spray your baking dish with cooking spray
3. Mix the olive oil, Calamansi, and garlic in a medium bowl and stir well
4. Rinse and pat dry the grouper fillets
5. Place fillets in baking and dish and rub both sides with the fish rub seasoning
6. Drizzle the lemon olive oil mixture over the fillets, distributing as evenly as possible
7. Bake at 400 degrees for 12-13 minutes
8. Switch oven to broil and continue to cook for 4-5 minutes
9. The filets are fully cooked when they flake easily with a fork
10. Plate over a bed of seasoned rice and garnish with a sprig of fresh rosemary
